If brownies are severely undercooked (raw batter), you can return them to the oven at 160°C (325°F) and bake for 5–10 more minutes. Cover lightly with foil to avoid overbrowning the top.
For fudgy brownies, yes! They should be moist and gooey but not raw. A little jiggle is fine; a liquid centre is not.
It’s better to slightly underbake. Overbaked brownies become dry and lose their luxurious texture.
Cutting hot brownies can cause them to collapse or become gummy. Always let them cool at least 20 minutes before slicing.
