The Dello Mano Philosophy: Handmade Is Our Heartbeat
When we started Dello Mano, we didn’t have investors or factories. What we had was a dream—to create beautiful, handmade food that celebrated care, intention, and quality. We spent months testing hundreds of brownie recipes at home, working tirelessly to perfect our product.
Once we had our signature brownie, we looked for a commercial kitchen. A fellow member of the Slow Food Movement showed us incredible kindness. After hearing our story and our dream to leave corporate life behind in pursuit of handmade food, she said simply: “You can have my kitchen at nights.”
And so we began. With two young daughters in tow, we’d wait until after dinner, pack up, and head to the Taringa Soccer Club kitchen. We’d make little beds for the girls while we baked into the night—only on the nights we had enough business to justify a batch. It wasn’t glamorous, but it was deeply meaningful.For months, we lived that rhythm—building a business, a philosophy, and a new way of life. Eventually, we gathered enough momentum to move into our own small commercial kitchen at Breakfast Creek Wharf.
That journey—powered by belief, kindness, family, and a commitment to handmade excellence—is the heart of Dello Mano. It’s why we do what we do, and it’s why every product we make still carries that same spirit.
